Zeppole o Tzippulasa

In Sardegna, come in quasi tutto il meridione d’Italia, le zeppole sono un dolce tipico di carnevale.
Anche dette tzìppulas (pronuncia: I' tsippulasa)tsippuasa, la loro ricetta varia compatibilmente con le tradizioni locali: piccole differenze ma anche varianti più importanti come il liquore che viene utilizzato (all’anice nel Campidano e su fil’e ferru nel nord Sardegna)
In generale il termine sta ad indicare delle frittelle a base di farina, uova, latte e zafferano.
La ricetta che pubblichiamo è quella più vicina a noi, gentilmente tramandata da tzia Antonichedda.

Ingredienti:
  • 1kg di farina
  • 1 patata bollita e schiacciata
  • 2 uova
  • 30gr di lievito di birra
  • 1 buccia di limone + 1 buccia d’arancia grattugiate
  • zafferano
  • Il succo di 1 arancia tiepido
  • ½  litro o ¼ litro di latte
  • Un bicchierino di liquore d’anice
  • Acqua tiepida e sale q.b. per lavorare la pasta
  • Acqua e zucchero per far rapprendere la pasta
  • Olio d’oliva per friggere
  • Zucchero
Preparazione:

Impastare con la macchina apposita la farina, la patata schiacciata, i tuorli d’uovo e l’acqua tiepida con il sale per circa 15 min.
Dopo aver ben lavorato l’impasto, aggiungiamo gradatamente la buccia d’arancia e di limone, lo zafferano e continuiamo a lavorarla per altri 10 min. L’impasto assumerà la forma di una palla e sarà soffice ed elastico.
Un  po’ alla volta vi versiamo il succo d’arancia tiepido, poi il liquore e continuiamo a lavorarla per altri 10 min.
Dopodiché aggiungiamo il latte tiepido dove precedentemente abbiamo fatto sciogliere il lievito, e impastiamo per ulteriori 10 min.
Infine aggiungiamo l’albume delle uova montato a neve e si lavora la pasta, questa volta  a mano, con dei movimenti circolari dal basso verso l’alto, infilando la mano aperta dentro la pasta, quasia schiaffeggiarla; aggiungiamo pochissima acqua zuccherata in modo da far rapprendere la pasta, spesso ci si bagna semplicemente le mani, ma questo dipende da come esce l’impasto che non deve essere troppo denso. Quando la pasta diventa elastica e molle, si copre con un canovaccio e la si lascia riposare per 1 ora.
Passata l’ora versiamo l’impasto in piccole dosi sull’olio bollente servendoci di un imbuto e, dandogli
la caratteristica forma a spirale, la si fa dorare su entrambi i lati, friggendola per circa 3 / 4 minuti.
Una volta fritte, facciamo assorbire l’olio in eccesso poggiandole su carta assorbente e cospargiamo di zucchero.

Servire con un buon bicchiere di Malvasia Sarda.

In Sardinia, as in almost all Southern Italy, zeppole are a typical Carnival treat.

Also known as tzippulas (pronunciation: ' zippulasa) or tsippuasa, their recipe varies according to local traditions: small differences but even more important ones as the liqueur being used (e.g. anise-flavored liqueurs in Campidano area or fil'e ferru in north Sardina) * 
In general, the term is used to describe sugar covered doughnuts made from flour, eggs, milk and saffron.  The recipe we publish is the closest to us, kindly handed down from tzia Antonichedda
She finally revealed the secret and I am now passing it on to you.

Ingredients:

  • 1Kg plain flour 
  • 1 potato, boiled and mashed
  • 2 eggs 
  • 30gr yeast 
  • zest 1 lemon 
  • zest 1 orange 
  • The lukewarm juice of 1 orange  
  • ½ liter or ¼ liter of milk 
  • a little anise-flavored liqueur
  • warm water and salt to knead the dough
  • Water and sugar to thicken the dough 
  • Oil for frying
  • Sugar
Method:

Combine the flour, the mashed potato, the yolks and warm salt water into the kitchen machine's bowl and start kneading with the dough hook for about 15 minutes.
After having thoroughly kneaded, add the saffron, the orange and lemon zest gradually and continue stirring until a  soft and elastic dough ball is created (approximately 10 minutes).
Add the lukewarm orange juice, little by little. Afterwards pour in the liqueur and knead it for a further 10 minutes.
Dissolve yeast into warm milk. Then add the yeasty milk and knead for another 10 minutes.  Finally add the whipped egg whites and use your hands to knead the dough mixture: flip the dough in a circular motion with the open  palm of your hand, from the bottom up, almost slapping it.
Add little sugared water to help thicken the dough: you can simply dip your hands  into this mixture before touching the dough, but this depends on how it comes out as the dough should not be too thick.
When the dough becomes elastic and soft, cover with a dish towel and leave to rest for one hour. Drop tablespoonfuls of the dough into hot oil through a funnel, and give it each doughnut the characteristic spiral shape.
Fry until golden brown, about 3 or 4 minutes. Drain on paper towels and dust with confectioners' sugar. 
Serve warm with a glass of Sardinian Malvasia.
